Lettuce Wraps - my way

This is my 9 year old, who likes these so much,
he had to have them on his birthday...who says
kids don't like vegetables?
After we posted these wraps... I tried them out and found myself tweaking them a bit to accomodate my family
Ingredients:
1.5 lb.     Ground Turkey
1             Red Pepper (diced small)
1/2 C      Snow Peas (diced small)
7             Water Chestnuts
(diced small - we used fresh, but canned are fine)
6              Scallions (green tops sliced mall)
6-7           Cloves Garlic (minced)
1TBLs     Ginger (minced)
1/2 C       Cilantro (stems and leaves -minced)
6 TBLs    Coconut Milk
1 TBLs    Chili Paste
2 TBLs    Braggs or Soy Sauce
1 TBLs    Sesame Oil
13 drops  Fish Sauce
1 TBLs    Honey
1/2 tsp     Cayene pepper (to taste)

Directions:
1.oil pan with sesame oil and coconut oil - brown turkey (break down into small bits)

2.Once almost browned -add ginger and garlic to heat and bloom the flavors.

3. Add veggies to saute. The veggies need to be finely diced to make a simple filling. No large pieces.
Add everything else to create your sauce and keep the veggies from sticking/burning. Cook thoroghly.

Serve on lettuce (butter lettuce is nice) or our favorite is Napa Cabbage Leaves.

You can use other veggies or even a different protein, come up with your own version and tell us what you did.

Simple Paleo Mexi Salad

Here's another easy meal I love to whip together for a quick lunch, so quick and yummy. (10minutes)
2 cups           Mixed Veggies - julienned
                     (Onion/Jalapeno/Fennel/Carrots)
1 cup             Black Beans

1. Saute' together small julienne pieces with a dash of Cumin, Salt, and Pepper.

2. Serve on a green salad, I like to mix:
Lettuce/Cilantro/ and
Heirloom tomatoes (didn't have any in the pic)

3. Garnish with
Avocado/Fresh Lime Juice/& Red Wine Vinegar

Lemon Pepper Talapia

This recipe is so easy, it doesn't even seem like a recipe, just a quick lunch. In fact, I can't ever seem to get a picture of this dish, it goes way too fast.(I found one to represent, but it's not mine...sorry)
But I strongly believe that the best recipes are the easiest, so pay attention..this isn't going to take much time.

Ingredients:
1-2             Talapia  (I use the frozen individual ones you get at the store)
1-2 TBLs   Butter
1-2 Tsp      Olive Oil/Canola Oil mix
1                Lemon (juice)
1 tsp          Lemon Pepper seasoning
salt+pepper

1. Heat your butter/oil in a saute' pan. While you rinse your fish with warm water. Set on paper towel to dry while you wait for the oils to heat , and the butter to melt. season with salt/pepper/lemon pepper.

2. Add fish to the pan, and cook thoroughly. (until flaky and opaque white) top with lemon juice while cooking.

That's it...soooo Yummy! Try, you'll love it.

Alterations:
 1. try red pepper flakes for heat.
2. you could make simple breadcrumbs out of almond meal and garlic oil toasted, to sprinkle on top. 3. This is super tasty on spaghetti squash, I will add a splash of coconut milk to create a sauce for the squash...so light and tasty!

Blackberry Blush Smoothie

12              Ice Cubes
1 cup         Orange Concentrate (there are great ones out there that are just juice, no extra crap)
2-3 TBLs  Vanilla Protein Powder
1 cup         Frozen Berries (any combo works)
1 cup         Coconut Milk (So Delicious brand)
1 TBLs      Vanilla
1 cup         Water (add for desired consistency)

Simple...toss it in your blender and blend away!

Makes 3 adult servings...so simple and YUMMY
